    Make the most of your self-catering kitchen on your holiday with these easy recipes. Nobody wants to slave for hours in the kitchen while on holiday – try a few of these easy ideas on your next holiday:

    Mango and Grilled Chicken Salad

    This fruity chicken salad is ideal for a summer vacation (and it’s healthy!)

    Ingredients

    • 450 gr chicket fillets
    • ½ teaspoon salt
    • ¼  teaspoon pepper
    • 6 cups of mixed salad greens
    • 60 ml balsamic vinaigrette
    • 1 mango, peeled and cubed
    • 1 cup fresh sugar snap peas, halved lengthwise

    Directions

    1. Toss chicken with salt and pepper
    2. On a lightly oiled rack, grill chicken over a medium heat or roast on each side until no longer pink, 3-4 minutes
    3. Cut chicken into 3 cm pieces
    4. Divide greens among 4 plates and drizzle with vinaigrette
    5. Top with chicken, mango and peas; serve immediately

    One-Pot Cheesy Pasta Bake

    This is an simple family favourite pasta bake.

    Ingredients

    • 1 tablespoon olive oil
    • 1 cup chopped onion
    • 250 gr chorizo or ham, sliced or cubed
    • ¾ teaspoon dried oregano
    • 1 ¼ cups unsalted chicken stock
    • ½ teaspoon salt
    • ½ teaspoon black pepper
    • 1 ½ cups unsalted crushed tomatoes or tomato sauce
    • 250 gr uncooked whole-grain spiral pasta
    • 5 ounces fresh baby spinach
    • 1 cup pre-shredded mozzarella cheese

    Directions

    1. Preheat the oven
    2.  Heat oil in large ovenproof skillet and sauté onions. Add chorizo / ham and oregano, fry for 2 minutes.
    3. Add stock, salt, pepper, tomatoes, and pasta; bring to a boil. Cover, reduce heat, and simmer 12 to 13 minutes or until pasta is done. Stir in spinach.
    4. Sprinkle cheese over pasta mixture. Place pan in oven; bake until cheese melts and begins to brown.

    Fudgy Chocolate Brownies

    This one you can pre-make at home, we just can’t guarantee that it would last as we are these treats will be picked off not long after they were baked….

    Ingredients

    • 175 gr unsalted butter
    • 230 gr milk chocolate, roughly chopped
    • 375 g white sugar
    • 3 large eggs, room temperature
    • 90 ml of Hellmann’s mayonnaise, room temperature
    • 30 ml of vanilla essence
    • 250 gr of cocoa powder
    • 250 gr of cake flour
    • 5 ml of salt
    • 250 gr chocolate chips
    • 125 ml fresh cream

    Directions

    1. Preheat the oven to 180 degrees and grease a 24cm x 24cm baking pan or line with parchment paper, leaving an overhang on the sides to lift the finished brownies out (makes cutting easier!) Set aside.
    2. In a microwave-safe bowl, combine the butter and 75 gr of the chopped chocolate. Melt in 30 second intervals, whisking after each until completely smooth. Whisk in the sugar until completely combined, then whisk in the eggs, mayonnaise and vanilla. The batter will be light brown and a little dull looking.
    3. Add the cocoa powder, flour, salt, 75 gr chopped chocolate and the chocolate chips. Fold it all together with a rubber spatula or wooden spoon. Batter will be very thick. Spread evenly into the prepared pan.
    4. Bake for 30 minutes, and then test the brownies with a toothpick. Insert it into the centre of the pan. If it comes out with wet batter, the brownies are not done. If there are only a few moist crumbs, the brownies are done. Keep checking every 2 minutes until you have moist crumbs.
    5. Remove from the oven and place on a wire rack to cool completely in the pan before cutting into squares.
    6. Place 80 gr of the chopped chocolate and cream in a microwave proof bowl.
    7. Heat at 30 second intervals, whisking at each interval until mixture is silky and smooth.
    8. Drizzle ganache over cooled brownies.

    The Best Breakfast Recipes for your Self-Catering Holiday

    Make the most of your self-catering kitchen on holiday with these easy breakfast recipes. Breakfast is the most important meal of the day, and with a good breakfast in, you’ll be able to tackle the day and make the most of every moment.

    Make-Ahead French Toast Bake

    Prep time: 20 minutes  |  Cook time: 40 minutes  |  Serves 6 – 8

    Ingredients

    • 1 loaf of bread
    • 8 large eggs
    • 3 cups milk
    • 1 teaspoon vanilla
    • ½ teaspoon cinnamon
    • dash of salt
    • maple syrup

    Directions

    Prep a casserole dish with butter or cooking spray. Arrange bread slices in 2 rows, overlapping slices. In a large bowl, combine the eggs, milk, vanilla, cinnamon and salt, and beat with a fork until blended. Pour mixture over the bread slices, making sure all are covered evenly with the milk-egg mixture. Spoon some of the mixture in between the slices. Cover and refrigerate overnight. The next morning, preheat oven to 170 °C . Bake for 40 minutes, until puffed and lightly golden. Serve with maple syrup.

    Breakfast Parfaits

    Prep time: 10 minutes  |  Serves 4 

    Ingredients

    • 2 cups granola
    • 2 cups plain yogurt
    • 2 cups fruit of your choice, such as bananas, blueberries, strawberries and mangos, fresh or thawed if frozen
    • 1 tablespoon honey

    Directions

    Line up four bowls. Evenly divide the yogurt in the bottom of each bowl. Spoon the granola on top. Next add fruit. Drizzle with honey.

    Summer Breakfast Skillet

    Prep time: 10 minutes  |  Cook time: 25 minutes  |  Serves 4

    Ingredients

    • 200g spicy (or plain) pork sausage
    • 1 medium sweet yellow pepper, chopped
    • 1 medium sweet red pepper, chopped
    • 1 medium onion, chopped
    • 3 medium tomatoes, chopped
    • 2 small baby marrow, chopped
    • 2 garlic cloves, minced
    • 1 teaspoon paprika
    • 4 large eggs
    • 1/4 teaspoon salt
    • 1/4 teaspoon pepper
    • 1/2 cup shredded cheddar cheese

    Directions

    In a large skillet, cook the pork sausages, peppers and onion over medium heat until sausages are cooked through. Break or slice the sausages into pieces. Stir in tomatoes, baby marrow, garlic and paprika; cook covered for approximately 5-7 minutes or until vegetables are tender.

    With back of spoon, make four wells in the vegetable mixture; break an egg into each well. Sprinkle eggs with salt and pepper. Cook, covered for approximately 4-6 minutes or until egg whites are completely set and yolks begin to thicken but are not hard.

    Remove from heat; sprinkle with cheese. Let stand, covered for 5 minutes or until the cheese is melted. Serve with a crusty bread.

    Cool off this summer with a Gin and Tonic infused drink or enjoy it as sundowner while admiring the view at your LPA Home Resort.

    With us already deep into summer and the warm scorching sun being upon us – it’s that wonderful time of the year where you shed all the layers of clothes, wear your favourite summer-inspired swimming attire, lay on the beach or next to your much-loved Resorts Swimming Pool on an outdoor lounger – and cool off with a summer-ready cocktail. With Gin and Tonic still on everybody’s lips as the new trendy drink – we thought we would share this cool-downer recipe for you to enjoy on your next visit to your favourite home-away-from-home Resort.

    Get the following ingredients to create this easy refreshing cucumber-cool cocktail:

    Aloe Vera Juice

    Ingredients:

    • 50ml (two shot glasses) of your favourite gin brand
    • 60ml sweetened Aloe Vera gel Juice.
    • The juice of one fresh lime and slices of lime for garnish
    • Slices of thinly-sliced cucumber
    • Blueberries for garnish (not essential)
    • 200ml of tonic water

    Instructions:

    Pour the shots of gin, aloe vera gel juice, juice of one fresh lime in a shaker and shake well. Strain into a cocktail glass and add thinly sliced cucumber, lime and blueberries. Pour tonic water over the mixture and stir with a cocktail stirrer.

    ‘It’s a summer thing’ – enjoy your refreshing drink, while soaking in the sun, taking in the view, and appreciate this time of year.

Instead of creating flavourless healthy food or overindulging in take-ways, create something with amazing Mexican flavours. This spicy dish with hearty flavours and traces of zesty lime juice will not only satisfy your hunger, but also your taste buds. And that’s exactly what this fun Mexican dish is! You simply throw everything into a pan and that’s it. You will not only have fewer dishes to wash, but an amazing meal in less than an hour.

    TIP: Try bulgur wheat as an alternative to quinoa.

    Healthy Comfort Food - Quinoa

    INGREDIENTS:
    • 1 tablespoon olive oil
    • 2 cloves garlic, minced
    • 1 jalapeno, minced
    • A cup of quinoa
    • A cup of vegetable broth
    • 1 (15-ounce) can of black beans, drained and rinsed
    • 1 (14.5 oz) can diced tomatoes
    • A cup of corn kernels, frozen or canned
    • 1 teaspoon chilli powder
    • 1/2 teaspoon cumin
    • Kosher salt and freshly ground black pepper, to taste
    • 1 avocado, halved, seeded, peeled and diced
    • Juice of 1 lime
    • 2 tablespoons chopped fresh cilantro leaves

    DIRECTIONS:
    1. In a large pan heat the olive oil over medium heat. Add the jalapeno and garlic in the pan and stir for about one minute. You will know one minute has passed when you start to smell the amazing fragrance.
    2. You can then add all the other ingredients in the pan, excluding the avocado, lime juice and cilantro. Stir frequently, until the entire mixture starts boiling, reduce the heat and let it simmer for about 20 minutes, until the quinoa is cooked.
    3. Add the cilantro, avocado and lime juice and give everything one last stir. Serve immediately afterwards.

    Pro Pancakes

    Become a pro and master the art of making a delicious pancake with this easy recipe. All you need is a few simple ingredients and a hearty appetite! Making pancakes only takes a few minutes, and is the perfect treat for any occasion.

    Pancakes are an all-time classic and can be made from home or your favourite home-away-from-home!

    Pancakes

    Prep time: 10 Minutes
    #TIP Don’t have a sweet tooth? Top your pancakes with something savoury like biltong or bacon.

     

    Ingredients:

    • 1 cup of flour
    • 1 heaped tsp of baking powder
    • 1 tsp of sugar
    • A pinch of salt
    • 2 small eggs, at room temperature
    • 2 cups of milk, at room temperature
    • Sunflower oil
    • Cinnamon, maple syrup, jam, fruit, chocolate chips, nuts (for a yummy topping)

     

     Directions:

    1. In a large bowl, mix flour, sugar, baking powder, and salt together.
    2. Crack and beat the eggs in another bowl and whisk in the two cups of milk.
    3. Add the flour mixture to the wet ingredients and whisk until a thick runny batter is formed.
    4. Let the mixture rest in the fridge. Set a non-stick frying pan on a medium to high temperature and add ½ a tablespoon of oil to coat.
    5. Keeping the pan at a good temperature, ladle some of the batter onto the frying pan to make a pancake. After about 30 seconds, bubbles will start to form on the pancake’s surface. Flip the pancake with a spatula and cook for 30 seconds on the second side.
    6. Transfer the cooked pancake onto a plate and repeat with the remaining batter.

    7. Top with cinnamon, maple syrup, jam, fruit, chocolate chips or nuts. Whatever tickles your taste buds!
